For the Banana Bread:
- 1 cup ripe bananas mashed (approx. 2 large bananas)
- 1 cup granulated sugar
- ½ cup unsalted butter softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt

- ½ cup sour cream or plain Greek yogurt
For the Cinnamon Crumb Topping:

- ½ cup light brown sugar packed
- ¼ cup cold unsalted butter cut into cubes
- ½ teaspoon ground cinnamon
Preheat your oven to 350°F (175°C). Lightly grease or line a 9×5 inch loaf pan with parchment paper. In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or fork until crumbly. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well. Stir in the vanilla extract and mashed bananas.

Using overly ripe bananas will add natural sweetness to the cake and enhance the banana flavor. If your bananas aren’t quite ripe, you can speed up the process by baking them in the oven at 300°F for about 10-15 minutes until they soften.
