  • 1 cup mashed ripe bananas about 2 large bananas
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs

  • ¼ cup unsalted butter cold and cubed
  • ½ teaspoon cinnamon

Step 1: Prepare the Crumb Topping

  • In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cubed cold butter and mix with your hands or a pastry cutter until the mixture becomes crumbly. Set aside.

Step 2: Preheat and Prepare the Pan

  • Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.

  • In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Add the mashed bananas and mix until well combined.

  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Using overly ripe bananas will add natural sweetness to the cake and enhance the banana flavor. If your bananas aren’t quite ripe, you can speed up the process by baking them in the oven at 300°F for about 10-15 minutes until they soften.
