It’s a vibrant twist on traditional tomato sauce, packed with fresh, tangy flavors. Perfect for pasta, pizza, or even as a dipping sauce, this recipe is simple to make and will add a burst of color and taste to any meal.

- 4 large yellow tomatoes about 1kg or 2.2 lbs
- 2 tablespoons olive oil
- 1 medium yellow or white onion peeled and chopped (about 2 heaping cups or 12 oz)
- 3 cloves garlic minced
- 1 handful of grated Parmesan cheese or vegetarian Italian hard cheese
- 1.5 teaspoons kosher salt
- 1/2 cup water
- 3 tablespoons butter
- Flaky sea salt to taste
Slice the yellow tomatoes in half. Scoop out the seeds and core, then chop the flesh into chunks.
Heat olive oil in a large saucepan over medium heat. Add the chopped onion and cook until it softens, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Add the chopped yellow tomatoes to the pan and stir to combine with the onion and garlic mixture.
Pour in 1/2 cup of water, then add kosher salt. Stir everything together, reduce heat to low, and let the sauce simmer, uncovered, for 15-20 minutes until the tomatoes break down and soften.
Once the tomatoes have softened, use an immersion blender to puree the sauce directly in the pot until smooth, or transfer the mixture to a regular blender.
Once blended, return the sauce to the heat and stir in the butter. Let the sauce simmer for another 5-10 minutes until it thickens to your desired consistency.
Stir in the grated Parmesan cheese until melted and well incorporated. Season with flaky sea salt to taste.
