Ingredients
  

For the Cake:

  • 12 oz white chocolate chopped
  • 3 3/4 cups 490g all-purpose flour
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 3/4 cups 350g sugar
  • 1 3/4 cups 420ml buttermilk, divided
  • 3/4 cup 180ml vegetable oil
  • 6 large eggs
  • 3/4 cup 170g unsalted butter, room temperature
  • 1 1/2 tsp vanilla extract

For the White Chocolate Frosting:

  • 18 oz white chocolate chopped
  • 1 1/2 cups unsalted butter softened
  • 3 cups powdered sugar
  • 3/4 cup whole milk
  • 1 1/2 tsp vanilla extract

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • Melt Chocolate: In a microwave-safe bowl, melt the 12 oz of white chocolate until smooth. Let cool slightly.
  • Combine Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
  • Mix Wet Ingredients: In a large bowl, beat the sugar, buttermilk, vegetable oil, and melted white chocolate. Add eggs, butter, and vanilla, mixing until combined.
  • Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the remaining buttermilk, until just combined.
  • Bake: Divide the batter evenly among the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • Make Frosting: Melt the 18 oz of white chocolate. In a bowl, beat the softened butter until creamy, then gradually add powdered sugar, milk, and melted chocolate. Mix in the vanilla until smooth.
  • Assemble Cake: Once the cakes are completely cool, frost the top of one layer, add the second layer, frost again, and finish with the third layer. Frost the top and sides of the cake.
