Ingredients
  

  • 300 g all-purpose flour or bread flour
  • 200 g whole wheat flour
  • 15 g 1 tablespoon maple syrup
  • 10 g 1 tablespoon instant yeast or quick-rise yeast
  • 45 g 3 tablespoons olive oil (or any neutral oil)
  • 10 g 2 teaspoons fine sea salt
  • 310 ml warm water or cold water for slower rising

Instructions
 

Prepare the dough:

  • In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt. In a separate small bowl, mix the warm water, maple syrup, and yeast. Let it sit for 5 minutes until slightly frothy.

Mix and knead:

  • Pour the yeast mixture and olive oil into the flour. Stir until it comes together into a sticky dough. Transfer the dough to a floured surface and knead for 8–10 minutes until smooth and elastic.

First rise:

  • Place the dough in a lightly oiled bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for 1–2 hours, or until it doubles in size.

Shape and second rise:

  • Punch down the dough to release air. Shape it into a loaf and place it in a greased loaf pan. Cover and let it rise for another 30–45 minutes until slightly puffy.

Bake:

  • Preheat the oven to 190°C (375°F). Bake the bread for 30–35 minutes until golden brown on top. Tap the bottom; it should sound hollow. Let the bread cool on a wire rack before slicing.

Notes

Note: For a softer crust, brush the loaf with a little olive oil immediately after baking. You can also add seeds like sunflower or pumpkin seeds on top before baking for extra texture.
