Ingredients
  

  • 1 cup + 1 tablespoon granulated sugar
  • 1 cup + 2 tablespoons cake flour
  • 4 teaspoons milk
  • 2 tablespoons oil vegetable or canola oil recommended
  • 1 teaspoon vanilla extract

Instructions
 

  • Start by heating your oven to 350°F (175°C). Prepare your cake pan by lightly greasing it with butter or oil, and then sprinkle a little flour over it. Alternatively, you can line the pan with parchment paper to prevent sticking.
  • In a mixing bowl, sift the cake flour to get rid of any lumps. Add the granulated sugar to the flour, and then stir gently to mix them together evenly.
  • Now, pour in the milk, the oil, and the vanilla extract into the bowl with the dry ingredients. Use a whisk or an electric mixer on a low setting to combine everything. Mix just until the batter comes together doesn’t over mix it, or the cake might turn out dense.
  • Pour the batter into the prepared pan, spreading it evenly. Place the pan in the oven and bake for around 18 to 20 minutes. To check if it’s done, insert a toothpick into the center of the cake if it comes out clean, the cake is ready.
  • Take the cake out of the oven and let it cool in the pan for about 5 to 10 minutes. Then, carefully remove it from the pan and place it on a wire rack to cool completely. Once cooled, slice and enjoy!

Notes: Using cake flour is essential for a tender crumb; all-purpose flour can be substituted but may result in a denser cake. You can add a pinch of salt or a teaspoon of baking powder if you prefer a slightly fluffier texture. For extra flavor, consider adding a tablespoon of melted butter instead of oil.
