Equipment

  • 2 mixing bowls
  • Whisk or electric mixer
  • Measuring cups and spoons
  • 9-inch round cake pan
  • Parchment paper (optional)
  • Cooling rack

Ingredients

  • 1 cup mayonnaise
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup milk

Instructions

Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper. This ensures your cake will come out of the pans easily and have a nice crumb.

Mix Dry Ingredients

  • In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 1 1/2 cups of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. This mixture will help ensure that your leavening agents are evenly distributed throughout the cake batter.

Combine Wet Ingredients

  • In a large bowl, mix 1 cup of mayonnaise with 1 cup of milk and 2 teaspoons of vanilla extract. You can use a hand mixer or stand mixer for this step to ensure everything is well combined. The mayonnaise adds moisture and richness to the cake.

Combine and Mix

  • Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix; you want to mix until the flour is just incorporated to keep the cake tender.

Bake and Cool

  • Divide the batter evenly between the prepared pans and smooth the tops. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

➤ Room Temperature Ingredients: Ensure mayonnaise and eggs are at room temperature for even mixing and a smoother batter.
➤ Avoid Overmixing: Mix the batter just until combined to keep the cake tender and fluffy.
