Ingredients
  

For the Vanilla Cake:

  • 2 ½ cups 300g all-purpose flour
  • 1 ⅔ cups 375g unsalted butter, softened
  • 1 ⅓ cups 320ml whole milk
  • 3 large eggs at room temperature
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 3 ⅓ cups 665g granulated sugar
  • ½ teaspoon salt
  • 2 ½ tablespoons 20g corn starch
  • 5 tablespoons 75ml sunflower oil
  • 2 tablespoons 30ml vanilla extract

For the Chocolate Frosting:

  • 4 tablespoons 60ml heavy whipping cream
  • 1 ½ cups 340g unsalted butter, at room temperature
  • 4 cups 800g granulated sugar
  • cup 60g cocoa powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Cake Batter:

  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, corn starch, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk and sunflower oil. Mix until just combined.

Bake the Cakes:

  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Make the Chocolate Frosting:

  • In a large bowl, beat the butter until creamy. Gradually add the sugar and cocoa powder, alternating with the heavy cream. Mix until well combined and fluffy.
  • Stir in the salt and vanilla extract.

Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of chocolate frosting on top.
  • Place the second layer on top and frost the top and sides of the cake with the remaining chocolate frosting.

Notes
