For the Vanilla Cake:

  • 1 ½ cups cake flour
  • ½ cup unsalted butter softened
  • 1 ½ teaspoons baking powder
  • cup white sugar
  • 2 large eggs
  • 2 tablespoons oil
  • 1 teaspoon vanilla seed paste or extract

  • ½ teaspoon kosher salt

For the Chocolate Filling:

  • 4 ounces semi-sweet chocolate chopped
  • 1 tablespoon powdered sugar
  • cup hot whipping cream
  • ¼ teaspoon vanilla extract

Instructions
 

Prepare the Cake Batter:

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  • In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and oil.
  • In another bowl, whisk together the cake flour, baking powder, and kosher salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined.

Bake the Cake:

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Make the Chocolate Filling:

  • In a heatproof bowl, combine the chopped chocolate and powdered sugar.
  • Heat the whipping cream until hot but not boiling, then pour it over the chocolate mixture. Let it sit for a minute.
  • Stir until the chocolate is completely melted and smooth. Add the vanilla extract and mix well.

Assemble the Cake:

  • Once the cake has cooled, slice it in half horizontally to create two layers.
  • Spread the chocolate filling evenly over the bottom layer, then place the top layer back on.
  • Optionally, you can dust the top with powdered sugar or serve with whipped cream.
