Ingredients
  

  • 4 medium-sized ripe tomatoes or 2 cups of crushed tomatoes
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional, for heat
  • Salt and pepper to taste
  • 1/2 cup water or vegetable broth to adjust consistency

Instructions
 

  • If using fresh tomatoes, score an “X” on the bottom of each tomato and blanch them in boiling water for 1-2 minutes until the skin starts to peel off. Remove the skin, chop the tomatoes into small pieces, and set aside. If using crushed tomatoes, skip this step.
  • Heat the olive oil in a medium saucepan or skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes soft and translucent.
  • Add the minced garlic to the pan with the onions and cook for another 1-2 minutes, stirring occasionally to prevent the garlic from burning.
  • Add the dried oregano, dried basil, and red pepper flakes (if using), then stir to combine, allowing the spices to release their flavors.
  • Stir in the chopped tomatoes (or crushed tomatoes) and season with salt and pepper to taste. Let the sauce simmer for about 15-20 minutes, stirring occasionally. The sauce will thicken and reduce as it cooks.
  • Once the sauce has cooked down, add 1/2 cup of water or vegetable broth to reach your desired consistency. Simmer for another 5 minutes, allowing the flavors to blend together. Taste and adjust the seasoning if needed.

Notes

 Fresh vs. Canned Tomatoes: You can use fresh tomatoes for a more vibrant flavor, or canned crushed tomatoes for convenience. Both work great in this recipe!
 Consistency Adjustment: The amount of water or broth can be adjusted based on how thick or thin you prefer your sauce. Add gradually until you reach the desired consistency.
 Herb Variations: Feel free to experiment with fresh herbs like basil or thyme if available. Fresh herbs should be added in the last few minutes of cooking.
 Spice Level: The red pepper flakes are optional but add a nice hint of heat. You can omit them for a milder sauce.
