- 4 medium-sized ripe tomatoes or 2 cups of crushed tomatoes
- 2 tablespoons olive oil
- 1 small onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon red pepper flakes optional, for heat
- Salt and pepper to taste
- 1/2 cup water or vegetable broth to adjust consistency
If using fresh tomatoes, score an “X” on the bottom of each tomato and blanch them in boiling water for 1-2 minutes until the skin starts to peel off. Remove the skin, chop the tomatoes into small pieces, and set aside. If using crushed tomatoes, skip this step.
Heat the olive oil in a medium saucepan or skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes soft and translucent.
Add the minced garlic to the pan with the onions and cook for another 1-2 minutes, stirring occasionally to prevent the garlic from burning.
Add the dried oregano, dried basil, and red pepper flakes (if using), then stir to combine, allowing the spices to release their flavors.
Stir in the chopped tomatoes (or crushed tomatoes) and season with salt and pepper to taste. Let the sauce simmer for about 15-20 minutes, stirring occasionally. The sauce will thicken and reduce as it cooks.
Once the sauce has cooked down, add 1/2 cup of water or vegetable broth to reach your desired consistency. Simmer for another 5 minutes, allowing the flavors to blend together. Taste and adjust the seasoning if needed.
