Ingredients
  

  • 4 large tart apples e.g., Granny Smith or Braeburn, peeled, cored, and sliced thinly
  • 200 g 1 cup granulated sugar
  • 125 g 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 large egg
  • 115 g ½ cup unsalted butter
  • 120 ml ½ cup whole milk
  • 1 tsp vanilla sugar or 1 tsp vanilla extract
  • Powdered sugar for dusting (optional)

Instructions
 

  • Peel, core, and thinly slice the apples. Toss them gently with half the cinnamon and a teaspoon of sugar. Set aside. Preheat your oven to 175°C (350°F). Line the bottom of a 9-inch round cake pan with parchment paper and lightly grease the sides.
  • In a medium bowl, sift together the flour, baking powder, salt, and remaining cinnamon. In a large bowl, beat the egg and granulated sugar together until the mixture becomes light and fluffy (about 3–5 minutes by hand or 2 with a mixer).
  • In a small saucepan, melt the butter over low heat. Remove from heat and stir in the milk and vanilla sugar (or extract). Let cool slightly.
  • Gently fold the dry mixture into the egg-sugar mixture. Gradually stir in the warm milk-butter mixture until a smooth batter forms.
  • Pour half the batter into the prepared pan. Layer half of the apples on top. Repeat with remaining batter and apples. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool slightly before dusting with powdered sugar.

Notes

This traditional Swedish apple cake is soft, mildly spiced with cinnamon, and best served with a warm drink or a dollop of whipped cream.
Using tart apples provides a pleasant contrast to the sweet batter, while vanilla sugar adds an authentic Scandinavian touch. No shortcuts or store-bought mixes are used.
