Ingredients

  • 1 tablespoon baking powder

  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the Frosting

  • 1 cup unsalted butter room temperature
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

Instructions
 

Prepare the Strawberry Filling

  • In a medium saucepan, combine the chopped strawberries, sugar, lemon juice, and cornstarch.
  • Cook over medium heat, stirring frequently, until the mixture thickens and the strawberries break down, about 8-10 minutes.
  • Allow the filling to cool completely before using.

Make the Vanilla Cake

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.

Prepare the Frosting

  • In a mixing bowl, beat the butter until creamy.
  • Gradually add the powdered sugar, beating well after each addition.
  • Add the heavy cream and vanilla extract, and beat until the frosting is light and fluffy.

Assemble the Cake

  • Once the cakes are completely cooled, level the tops if needed.
  • Place one cake layer on a cake stand or serving plate. Spread a generous layer of strawberry filling over the top.
  • Place the second cake layer on top of the filling.
  • Frost the top and sides of the cake with the vanilla buttercream frosting.
  • Decorate with fresh strawberries or any other desired toppings.

Notes

For an extra touch of elegance, consider adding a layer of strawberry jam between the cake layers or using fresh whipped cream in place of part of the frosting.
You can also sprinkle a bit of powdered sugar over the top for a snowy effect that’s perfect for a winter celebration.
