Equipment

  • Cocktail shaker
  • Jigger (for measuring)
  • Glass (highball or cocktail glass)
  • Strainer (optional, for smoother drink texture)
  • Spoon or stirrer for mixing

Ingredients

  • 2 oz gold rum
  • 4 oz fresh pineapple juice chilled for best taste
  • 1 oz coconut cream or coconut milk
  • 1/2 oz freshly squeezed lime juice
  • cup ginger ale divided
  • Pineapple slice for garnish, optional
  • Ice cubes
  • Mint leaves for garnish, optional

Instructions

Chill your glass:

  • Start by placing your glass in the freezer or adding a few ice cubes to it to chill while you prepare the drink.

Combine ingredients:

  • In a cocktail shaker, add the gold rum, fresh pineapple juice, coconut cream (or coconut milk), and freshly squeezed lime juice.

Shake well:

  • Add ice cubes to the shaker, then close it and shake vigorously for about 15-20 seconds, ensuring all the ingredients are well-mixed and chilled.

Prepare the glass:

  • Remove the ice from your chilled glass and strain the mixture into the glass, ensuring it’s smooth and free from any ice shards.

Add ginger ale:

  • Pour the ginger ale into the glass. You can divide it to your liking, or add a splash for a lighter effervescence. Stir gently to combine.

Garnish and serve:

  • Garnish with a slice of pineapple and a few mint leaves (if desired). Serve immediately, and enjoy your refreshing tropical drink!

Notes

While this Pineapple Rum Drink is undoubtedly refreshing, it’s also a bit on the sweeter side due to the pineapple juice and simple syrup. You can adjust the level of sweetness to your taste by adding more or less syrup.
For a lighter, less sweet version, consider using coconut water instead of simple syrup. The lime juice adds a nice tang that balances out the sweetness perfectly.
