Instructions
 

  • Start by chopping the pineapple into small chunks. Mince the garlic cloves and remove the stems and seeds from the habanero peppers (use gloves for safety). If you want to adjust the heat level, you can remove some or all of the seeds from the peppers.
  • In a small saucepan, combine the chopped pineapple, minced garlic, and habanero peppers. Add the white vinegar and bring to a gentle simmer over medium heat. Stir occasionally and let it cook for 10-15 minutes, or until the pineapple softens and the flavors start to meld.
  • Once the pineapple mixture is cooked down, transfer it to a blender or food processor. Add the fresh lime juice, cilantro leaves, and salt. Blend until smooth. You can strain the sauce if you prefer a smoother texture or leave it chunky for more texture.
  • Taste the sauce and adjust the seasoning if needed. If you’d like more heat, add an additional habanero pepper; if it’s too spicy, add a little more pineapple or a small amount of honey to balance it out.
  • Allow the sauce to cool down to room temperature. Once cooled, transfer it to an airtight container and refrigerate. The sauce can be stored in the fridge for up to 2 weeks.
