- 1 cup ketchup
- 1 tsp tarragon dried
- 1/2 cup water
- 1/4 cup cider vinegar
- 1/4 cup brown sugar
- 2 tbsp Worcestershire sauce
- 1 head of garlic peeled
- 7 medium onions quartered
- 1 tsp smoked paprika
- 1 tsp red pepper flakes
- 1/2 tsp ground cinnamon
- 7 1/2 tsp chili powder
Prepare the ingredients Peel the garlic and quarter the onions. Set them aside.
In a large saucepan, combine the ketchup, water, cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, red pepper flakes, ground cinnamon, and chili powder. Stir the mixture well.
Add the peeled garlic and quartered onions into the saucepan with the sauce mixture.
Bring the sauce to a simmer over medium heat. Once it starts simmering, reduce the heat to low and cook uncovered for about 45 minutes to 1 hour, stirring occasionally. The sauce should thicken as it cooks.
After cooking, remove the garlic and onions from the sauce using a spoon or fine strainer. You can blend them separately if you prefer a smoother sauce, or simply discard them if you like your sauce with a chunky texture.
Taste the sauce and adjust seasoning if needed (more chili powder, salt, or sugar depending on your preference).
Let the sauce cool before serving. It can be stored in an airtight container in the refrigerator for up to two weeks.
