Ingredients
  

  • 6 tablespoons Cold Mountain Red Miso
  • 2 tablespoons mirin Japanese sweet rice wine
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon garlic minced
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons water
  • ½ teaspoon chili flakes

Instructions
 

  • Start by grating fresh ginger and mincing garlic. Toast sesame seeds in a dry pan over medium heat until fragrant and golden, about 1 minute. Set everything aside.
  • In a small saucepan over medium-low heat, add miso, mirin, soy sauce, rice vinegar, sesame oil, honey, and water. Whisk until smooth and everything starts to meld together.
  • Stir in the grated ginger, minced garlic, and chili flakes. Let the sauce simmer gently for about 3–5 minutes, stirring occasionally to prevent burning or sticking.
  • Once the sauce has slightly thickened and the flavors have combined well, remove it from heat. Stir in the toasted sesame seeds for a bit of crunch and nuttiness.
  • Let the sauce cool slightly before using. Pour it into a clean jar or container and refrigerate. It keeps well for up to 1 week. Shake or stir before using.

Notes

This Miso BBQ Sauce Recipe is excellent for glazing grilled vegetables, chicken, tofu, or seafood. You can adjust the chili flakes to taste, or omit them if you prefer a milder sauce. Add a splash of water if it thickens too much in the fridge.
