Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup fresh mushrooms sliced (button or cremini work great)
  • ½ cup water or vegetable broth
  • 1 tsp apple cider vinegar
  • ¼ tsp salt adjust to taste
  • 1 red pepper chopped
  • 1 tbsp flour or matzo meal for thickening
  • 1 tbsp paprika
  • Freshly cracked black pepper to taste

Instructions
 

Heat the Olive Oil:

  • In a large sauté pan or skillet, heat the extra virgin olive oil over medium heat.

Sauté the Onion & Garlic:

  • Add the finely chopped onion and sauté for about 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds, just until fragrant.

Add the Mushrooms & Red Pepper:

  • Stir in the sliced mushrooms and chopped red pepper. Sauté for 5-6 minutes until the mushrooms release their moisture and begin to soften.

Incorporate the Tomato Paste:

  • Add the tomato paste and cook for 2 minutes, stirring occasionally, to allow it to deepen in flavor.

Pour in the Broth & Vinegar:

  • Add the water (or vegetable broth) and apple cider vinegar to the pan. Stir well to combine and bring to a gentle simmer.

Season & Thicken:

  • Sprinkle in the salt, paprika, and freshly cracked black pepper to taste. In a small bowl, mix the flour (or matzo meal) with a little water to form a smooth slurry, then stir this into the pan to thicken the sauce. Simmer for another 5-7 minutes, stirring frequently.

Taste and Adjust:

  • Taste the sauce and adjust seasoning as needed, adding more salt, pepper, or vinegar to balance the flavor.

Serve:

  • Once the sauce has thickened to your desired consistency, remove from heat and serve hot. It pairs wonderfully with pasta, roasted vegetables, or as a topping for meats.
