Ingredients
  

  • 2 cups of fresh tomatoes chopped (or 1 can of crushed tomatoes)
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon lemon zest from 1 lemon
  • 2 tablespoons fresh lemon juice from 1 lemon
  • 1 teaspoon sugar
  • 1/2 cup fresh parsley chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • If using fresh tomatoes, chop them into small pieces. If using canned crushed tomatoes, open the can and measure out 2 cups.
  • In a medium saucepan or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Stir in the chopped fresh tomatoes (or canned crushed tomatoes) and cook for about 5-7 minutes, allowing the tomatoes to soften and break down slightly.
  • Stir in the lemon zest and fresh lemon juice, mixing well to incorporate the citrusy flavors into the sauce.
  • Add sugar, salt, and pepper to balance the acidity of the tomatoes. Continue to cook for another 5 minutes, allowing the flavors to meld together.
  • Once the sauce has thickened slightly, stir in the chopped fresh parsley. Taste the sauce and adjust seasoning if needed.
  • Serve the lemon tomato sauce warm over pasta, rice, or as a dip for bread. Enjoy the bright and tangy flavors!
