- 2 cups of fresh tomatoes chopped (or 1 can of crushed tomatoes)
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon lemon zest from 1 lemon
- 2 tablespoons fresh lemon juice from 1 lemon
- 1 teaspoon sugar
- 1/2 cup fresh parsley chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
If using fresh tomatoes, chop them into small pieces. If using canned crushed tomatoes, open the can and measure out 2 cups.
In a medium saucepan or skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Stir in the chopped fresh tomatoes (or canned crushed tomatoes) and cook for about 5-7 minutes, allowing the tomatoes to soften and break down slightly.
Stir in the lemon zest and fresh lemon juice, mixing well to incorporate the citrusy flavors into the sauce.
Add sugar, salt, and pepper to balance the acidity of the tomatoes. Continue to cook for another 5 minutes, allowing the flavors to meld together.
Once the sauce has thickened slightly, stir in the chopped fresh parsley. Taste the sauce and adjust seasoning if needed.
