Ingredients
  

  • 3 ¾ cups King Arthur Golden Wheat Flour
  • 1 ¼ cups lukewarm water
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons olive oil or melted butter
  • 1 packet 2 ¼ teaspoons active dry yeast
  • 1 teaspoon salt
  • ¼ cup 28g King Arthur Baker’s Special Dry Milk or nonfat dry milk
  • 1 tablespoon ground flaxseed

Instructions
 

Activate the yeast:

  • In a small bowl, combine lukewarm water and honey (or maple syrup). Sprinkle yeast over the top and let sit for 5-10 minutes, until frothy.

Mix dry ingredients:

  • In a large bowl, combine King Arthur Golden Wheat Flour, salt, dry milk, and ground flaxseed.

Combine wet and dry ingredients:

  • Add the yeast mixture and olive oil (or melted butter) to the dry ingredients. Stir until the dough begins to come together.

Knead the dough:

  • Turn the dough out onto a floured surface and knead for about 8-10 minutes, until smooth and elastic.

First rise:

  • Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let rise in a warm place for 1-1.5 hours, until doubled in size.

Shape and second rise:

  • Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan. Cover and let rise for 30-45 minutes, until it has risen above the rim of the pan.

Bake:

  • Preheat the oven to 350°F (175°C). Bake the bread for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Cool:

  • Remove the bread from the pan and let it cool on a wire rack before slicing.

Notes

For best results, always use fresh yeast. Old or expired yeast may not activate properly, leading to a dense loaf.
If you don’t have King Arthur Flour, any high-quality whole wheat flour can be used, but you may notice slight variations in texture and flavor.
