Ingredients
  

For the Cake:

  • 1 box 15.25 oz vanilla cake mix
  • 1 box 3.4 oz instant vanilla pudding mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Jello Layer:

  • 1 box 3 oz flavored Jello (any color/flavor you prefer)
  • 1 cup boiling water
  • 1 cup cold water

For the Pudding Topping:

  • 1 box 3.4 oz instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup whipped topping Cool Whip or similar

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Cake Batter: In a large mixing bowl, combine the vanilla cake mix, instant vanilla pudding mix, water, vegetable oil, and eggs. Using an electric mixer or whisk, beat the mixture on medium speed for about 2 minutes until well combined and smooth.
  • Bake the Cake: Pour the batter into a greased 9×13-inch baking pan. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and allow to cool completely in the pan.
  • Prepare the Jello Layer: In a medium bowl, dissolve the flavored Jello in 1 cup of boiling water, stirring until fully dissolved. Add 1 cup of cold water and mix well. Allow the mixture to cool slightly before pouring it over the cooled cake.
  • Chill the Cake: Once the Jello is poured over the cake, cover the pan with plastic wrap or aluminum foil and refrigerate for at least 2 hours, allowing the Jello to set.
  • Prepare the Pudding Topping: In another bowl, whisk together the instant vanilla pudding mix and 2 cups of cold milk. Stir until thickened, about 2 minutes. Fold in the whipped topping until well combined and fluffy.
  • Assemble the Cake: After the Jello layer has set, spread the vanilla pudding topping evenly over the cake. You can decorate with fresh fruits or sprinkles if desired.

Notes

If you’re in a hurry, this cake can be served immediately after adding the pudding, but chilling it gives it a firmer texture and allows the flavors to blend more fully. I’ve found that letting it sit overnight in the refrigerator makes the cake even more delicious.
