- ½ cup brown sugar
- 2 tablespoons molasses
- ¼ cup red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika or regular paprika
- ½ teaspoon chili powder
- ¼ teaspoon ground black pepper
- 2 cups water
- 1 tablespoon hot sauce adjust to taste
- 2 teaspoons chipotle pepper in adobo minced (or chipotle powder)
- ½ teaspoon sea salt
In a medium saucepan, combine the huckleberries (or your berry substitute), ketchup, brown sugar, molasses, red wine vinegar, water, and all the spices—garlic powder, onion powder, paprika, chili powder, black pepper, and sea salt.
Stir in the hot sauce and chipotle peppers in adobo. These add a signature smoky flavor and a touch of heat.
Place the pan over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer gently, uncovered, for 25–30 minutes. Stir occasionally to prevent sticking. The sauce should reduce by about one-third and thicken to your desired consistency.
For a smooth texture, blend the sauce using an immersion blender right in the pot, or let it cool slightly and use a countertop blender. For an ultra-smooth finish, strain it through a fine mesh sieve.
Let the sauce cool completely before transferring it to a clean glass jar or airtight container. Store in the refrigerator for up to 2 weeks, or freeze for longer keeping.
