- 1 cup fresh pineapple juice or canned if fresh is unavailable
- ½ cup ketchup
- 2 teaspoons olive oil
- 1 small onion chopped
- 1 jalapeno seeded and diced
- 1½ cups fresh pineapple chopped
- 1 teaspoon kosher salt
- ¼ cup golden rum
- 1 tablespoon molasses
- ¼ cup apple cider vinegar
- 2 tablespoons brown sugar packed
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dry mustard
- 2 cloves garlic minced
- 1 teaspoon ginger grated
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes adjust to your spice preference
In a medium saucepan, heat 2 teaspoons of olive oil over medium heat. Add the chopped onion and diced jalapeno. Cook for about 5 minutes, stirring occasionally, until the onions soften and become translucent.
Stir in 1½ cups of fresh pineapple chunks and cook for an additional 2-3 minutes, allowing the pineapple to soften.
Pour in the fresh pineapple juice, ketchup, molasses, apple cider vinegar, soy sauce, Worcestershire sauce, and golden rum. Stir everything together to combine.
Add the kosher salt, brown sugar, minced garlic, grated ginger, smoked paprika, dry mustard, and red pepper flakes. Stir well to incorporate all the seasonings.
Lower the heat to a simmer and cook the sauce uncovered for about 20 minutes, stirring occasionally. The sauce should reduce slightly and thicken. Taste and adjust the seasoning as needed.
For a smooth sauce, use an immersion blender directly in the pan or transfer the sauce to a regular blender. Blend until smooth and velvety.
Let the BBQ sauce cool down before using. It can be stored in an airtight container in the fridge for up to a week.
