Ingredients
  

  • ½ cup water
  • 1 cup guava paste or guava jelly if paste is unavailable
  • ½ cup ketchup
  • ¼ cup dark rum
  • ¼ cup tomato paste
  • ¼ cup fresh lemon juice
  • ¼ cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 2 tablespoons minced onion
  • 1 tablespoon minced fresh ginger root
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon chili powder
  • ¼ scotch bonnet chile pepper or to taste, minced
  • Kosher salt and pepper to taste

Instructions
 

Combine Ingredients:

  • In a medium saucepan, add the water, guava paste (or jelly), ketchup, dark rum, tomato paste, lemon juice, apple cider vinegar, Dijon mustard, Worcestershire sauce, and soy sauce. Stir together until the guava paste begins to dissolve.

Add Flavorings:

  • Stir in the minced garlic, onion, and ginger. Add the black pepper, chili powder, scotch bonnet pepper, and salt to taste. Continue to mix everything well.

Cook the Sauce:

  • Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally to prevent sticking or burning. Let the sauce cook for about 15-20 minutes, until it thickens to your desired consistency.

Adjust Flavor:

  • Taste the sauce and adjust seasonings as needed. If you prefer a sweeter sauce, add a little extra guava paste or jelly. If you want more heat, increase the amount of scotch bonnet pepper.

Cool and Serve:

  • Once the sauce has thickened and the flavors have melded together, remove it from the heat. Let it cool to room temperature before using. You can store it in an airtight container in the refrigerator for up to a week.
