Equipment

  • Mixing bowl
  • Hand mixer or stand mixer
  • Measuring cups and spoons
  • Baking sheet
  • parchment paper,
  • Cooling rack

Ingredients

  • 1 cup salted butter softened
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon smallish-medium coarse sea salt
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup shortening
  • 2/3 cup finely chopped walnuts

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients:

  • In a large mixing bowl, combine the softened butter, shortening, granulated sugar, and brown sugar. Cream them together until light and fluffy. Beat in the eggs, one at a time, and then add the vanilla extract.

Add Dry Ingredients:

  • In a separate bowl, whisk together the flour, baking soda, and sea salt. Gradually add the dry mixture into the wet ingredients, mixing just until combined.

Stir in Chocolate and Nuts:

  • Fold in the semi-sweet chocolate chips and chopped walnuts, ensuring they are evenly distributed throughout the dough.

Scoop the Dough:

  • Using a spoon or cookie scoop, drop rounded balls of dough (about 1 to 1 ½ inches in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.

Bake and Cool:

  • Bake in the preheated oven for 10-12 minutes or until the edges are golden but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

❖ Soft and Chewy Tip: For extra chewy cookies, try refrigerating the dough for about 30 minutes before baking. Chilling the dough helps the cookies retain moisture and prevents them from spreading too thin while baking.
❖ Customize the Chips: If you want to mix things up, feel free to swap the semi-sweet chocolate chips with milk chocolate, dark chocolate, or even white chocolate chips. You could also add nuts like walnuts or pecans for a bit of crunch and flavor.
