- 2 tablespoons olive oil
- 4 cloves garlic crushed
- 1 large sprig fresh basil
- 1 28 oz can of whole peeled tomatoes (or fresh tomatoes, if in season)
- 3 tablespoons 50g tomato paste
- 1 teaspoon sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon Kosher salt
- A pinch of red pepper flakes
- 2 tablespoons fresh basil leaves optional, for extra freshness
Heat the olive oil in a large saucepan over medium heat. Add the crushed garlic and cook for 1-2 minutes until fragrant, stirring occasionally.
Add the sprig of basil and whole peeled tomatoes (or fresh tomatoes) to the pan. Stir well, breaking the tomatoes apart with a spoon.
Mix in the tomato paste, sugar, dried oregano, dried basil, Kosher salt, and red pepper flakes. Let the sauce simmer uncovered on low heat for 25-30 minutes, stirring occasionally.
Taste and adjust the seasoning as needed. For added freshness, stir in the fresh basil leaves before serving.
Remove the basil sprig and serve the sauce hot with your favorite pasta, pizza, or dipping bread. Enjoy!
