Ingredients
  

  • 2 tablespoons olive oil
  • 4 cloves garlic crushed
  • 1 large sprig fresh basil
  • 1 28 oz can of whole peeled tomatoes (or fresh tomatoes, if in season)
  • 3 tablespoons 50g tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon Kosher salt
  • A pinch of red pepper flakes
  • 2 tablespoons fresh basil leaves optional, for extra freshness

Instructions
 

  • Heat the olive oil in a large saucepan over medium heat. Add the crushed garlic and cook for 1-2 minutes until fragrant, stirring occasionally.
  • Add the sprig of basil and whole peeled tomatoes (or fresh tomatoes) to the pan. Stir well, breaking the tomatoes apart with a spoon.
  • Mix in the tomato paste, sugar, dried oregano, dried basil, Kosher salt, and red pepper flakes. Let the sauce simmer uncovered on low heat for 25-30 minutes, stirring occasionally.
  • Taste and adjust the seasoning as needed. For added freshness, stir in the fresh basil leaves before serving.
  • Remove the basil sprig and serve the sauce hot with your favorite pasta, pizza, or dipping bread. Enjoy!
