Ingredients
  

  • 3 cups whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon sugar or honey
  • 2 ¼ teaspoons 1 packet active dry yeast
  • 1 ½ cups warm water about 110°F or 43°C
  • 1 tablespoon olive oil optional for added richness

Instructions
 

Prepare the Yeast

  • Combine warm water, sugar (or honey), and yeast in a small bowl. Let it sit for 5-10 minutes until frothy.

Mix Dry Ingredients

  • In a large bowl, whisk together whole wheat flour, all-purpose flour, and salt.

Combine Mixtures

  • Pour the yeast mixture into the dry ingredients. Stir until a shaggy dough forms. Add olive oil if using.

Knead the Dough

  • Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.

First Rise

  • Place the dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour, until doubled in size.

Shape the Loaf

  • Punch down the dough, shape it into a loaf, and place it on a parchment-lined baking sheet or in a Dutch oven.

Second Rise

  • Cover the loaf and let it rise for another 30-45 minutes while preheating your oven to 450°F (230°C).

Bake

  • Bake for 30-35 minutes until golden brown and hollow-sounding when tapped. Cool on a wire rack before slicing.
