Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup packed brown sugar + 2 tablespoons

  • 1 large egg yolk
  • 1 teaspoon cornstarch
  • 2 cups all-purpose flour

Instructions
 

  • First, get your oven ready by heating it to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat so the cookies don’t stick.
  • Next, take a large bowl and beat the softened butter together with both the brown sugar and granulated sugar. Keep mixing until the mixture looks light and fluffy—this usually takes a couple of minutes if you’re using an electric mixer on medium speed.
  • Now, add the vanilla extract, one whole egg, and one egg yolk to the butter and sugar mix. Beat everything until it’s smooth and well combined.
  • In a different bowl, whisk together the flour, cornstarch, baking soda, and salt. Slowly add this dry mixture into the wet ingredients, stirring gently just until everything comes together. Try not to over mix because that can make the cookies tough.
  • Using a spoon, scoop rounded tablespoons of dough onto your prepared baking sheet. Leave about 2 inches of space between each cookie.
  • Bake them in the oven for 10 to 12 minutes. You want the edges to be golden brown but the centers to still look a little soft. Once done, take the cookies out and let them sit on the baking sheet for 5 minutes. After that, move them to a wire rack so they can cool completely.
