Equipment

  • Mixing bowls
  • Hand or stand mixer
  • Measuring cups and spoons
  • Baking sheets
  • Parchment paper or silicone baking mat
  • Cooling rack

Ingredients

  • 1 cup 226 g unsalted butter, softened
  • 3/4 cup 150 g granulated sugar
  • 3/4 cup 150 g brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups 280 g all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: 1 cup mix-ins like dried cranberries chopped nuts, or shredded coconut

Instructions

Preheat and Prep

  • Start by preheating your oven to 350° F (175° C). Line your baking sheets with parchment paper or silicone mats for easy cleanup.

Cream the Butter and Sugars

  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until smooth and fluffy. I like to use a hand mixer for this step, but a wooden spoon works too with a little extra effort.

Add Wet Ingredients

  • Beat in the eggs, one at a time, until fully incorporated. Add the vanilla extract and mix until combined.

Mix the Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Slowly add this dry mixture to the wet ingredients, mixing just until combined.

Customize Your Dough

  • If you’re adding mix-ins like nuts or dried fruit, gently fold them into the dough.

Scoop and Shape

  • Scoop out tablespoons of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.

Bake

  • Bake in the preheated oven for 10–12 minutes, or until the edges are golden brown. The centers may look slightly underdone, but they’ll set as they cool.

Cool

  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely.

Notes

✦ Butter Temperature: Ensure the butter is softened to room temperature before mixing. This will help create a smooth dough and prevent the cookies from being too dense.
✦ Measuring Flour: For accurate results, spoon the flour into your measuring cup and level it off. Too much flour can make the cookies dry and crumbly.
✦ Baking Time: Keep an eye on the cookies as they bake. They should be golden around the edges but slightly soft in the center. Overbaking can result in crispier cookies rather than the soft texture you’re aiming for.
