  • Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This should take about 2-3 minutes with a hand or stand mixer.
  • Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  • Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  • Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid over mixing to keep the cookies tender.
  • Fold in Cinnamon Chips: Gently fold in the cinnamon chips using a spatula or spoon, distributing them evenly throughout the dough.
  • Portion the Dough: Use a cookie scoop or tablespoon to drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
