Instructions
 

Prepare the Sponge Cake

  • Preheat Oven: Set your oven to 350°F (175°C) and line a 15×10-inch baking sheet with parchment paper.
  • Mix Eggs and Sugar: Beat 4 large eggs and 1 cup sugar together until thick and pale.
  • Combine Dry Ingredients: Sift 1 cup flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder.
  • Fold and Bake: Fold dry ingredients into the egg mixture, add 1 teaspoon vanilla extract, and spread batter onto the prepared sheet. Bake for 12-15 minutes.

Assemble the Roll Cake

  • Cool Cake: Turn the baked cake onto a powdered sugar-dusted towel, peel off parchment, and roll with the towel. Let cool completely.
  • Prepare Filling: Whip 1 cup heavy cream with 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Optionally, fold in 1/2 cup jam.
  • Fill and Roll: Unroll the cooled cake, spread filling, then re-roll carefully. Place seam-side down on a platter.

Decorate and Serve

  • Dust and Decorate: Dust with powdered sugar and add fresh berries or glitter if desired.
