Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion finely diced
  • 2 garlic cloves minced
  • 9 roma tomatoes chopped
  • 2 chipotle peppers in adobo sauce finely chopped
  • 1 tbsp adobo sauce from the chipotle can
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Heat olive oil in a medium saucepan over medium heat.Add the chopped onion and sauté for about 5 minutes, or until softened and translucent.
  • Add the minced garlic and cook for an additional 1-2 minutes, stirring occasionally, until fragrant.
  • Stir in the chopped roma tomatoes, chipotle peppers, and adobo sauce. Season with salt and freshly ground black pepper to taste.
  • Let the mixture cook, stirring occasionally, for 15-20 minutes until the tomatoes break down and the sauce thickens.
  • If you prefer a smoother sauce, use an immersion blender to blend the sauce to your desired consistency, or transfer it to a blender and pulse until smooth. (Optional)
  • Taste and adjust seasoning if necessary, adding more salt, pepper, or adobo sauce for a spicier kick.
  • Once the sauce has reached the desired thickness, remove from heat and let it cool slightly before serving or storing.
  • Serve over tacos, grilled meats, pasta, or as a dip, and enjoy!
