- 4 chipotle peppers in adobo sauce canned
- 1 tablespoon olive oil
- 2 garlic cloves minced
- 1 small onion chopped
- 1 tablespoon white vinegar
- 1 teaspoon fresh lime juice
- 1 teaspoon smoked paprika optional, for extra smokiness
- 1/4 cup water
- Pinch of salt
- 3/4 teaspoon Mexican oregano
- 1/4 teaspoon cumin
- 1/4 teaspoon sugar optional
Season:
Stir in the white vinegar, lime juice, smoked paprika (if using), water, salt, oregano, cumin, and sugar (if desired). Simmer the mixture on low heat for about 8-10 minutes to allow the flavors to meld together.
Taste and Adjust:

If you’re sensitive to heat, consider adjusting the number of chipotle peppers you use. Chipotles have a nice smokiness with medium heat, but you can control how fiery the sauce gets.
For a milder version, start with fewer peppers and add a touch of honey or more sugar to balance out the spice.
