Ingredients
  

  • 1 cup margarine softened
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup powdered sugar confectioners’ sugar
  • 3/4 cup packed light brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional, for a richer cherry flavor
  • 1 cup cherry chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper. In a medium bowl, whisk together the all-purpose flour and baking soda. Set aside.
  • In a large mixing bowl, beat the margarine, powdered sugar, and brown sugar until smooth and creamy.
  • Add the rolled oats, vanilla extract, and almond extract (if using) to the mixture, then gradually add the flour mixture, blending until fully incorporated.
  • Stir in the cherry chips. Drop rounded spoonfuls of dough onto the prepared cookie sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the sheet for a few minutes before transferring them to a cooling rack to cool completely.
