Step 1:
Start by prepping your ingredients. Peel and chop the carrots into small chunks so they’re easier to blend. Peel the ginger and orange (if using), and pick a few fresh mint leaves.
Step 2:
Place the chopped carrots, ginger, orange (or lemon juice), mint leaves, and cold water into a blender. Blend on high speed until smooth. You may need to stop and scrape down the sides or add a bit more water if it’s too thick.
Step 3:
Strain the juice through a fine mesh strainer, nut milk bag, or cheesecloth into a bowl or pitcher to remove the pulp (optional, depending on your texture preference). Pour the fresh carrot juice into a glass, garnish with a mint leaf if desired, and serve immediately.
