Ingredients
  

  • 1 cup tomato paste
  • ½ cup molasses
  • ½ cup distilled white vinegar
  • ½ cup brown sugar light or dark
  • cups water
  • 2 tablespoons modified potato starch or cornstarch as a substitute
  • 1 tablespoon salt
  • 2 teaspoons natural smoke flavor or 1 teaspoon liquid smoke
  • 1 tablespoon mustard flour or ground mustard
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder with blended garlic and salt if available
  • ½ teaspoon black pepper

Instructions
 

Step 1: Mix the Base

  • Add tomato paste, molasses, vinegar, brown sugar, and water to a medium saucepan. Whisk until the mixture is smooth and everything blends together.

Step 2: Add Seasonings

  • Stir in the salt, mustard flour, paprika, garlic powder, onion powder, chili powder, and black pepper. Mix well so the spices are evenly spread through the sauce.

Step 3: Add Thickener and Smoke

  • Sprinkle in the potato starch (or cornstarch) and whisk right away to avoid lumps. Stir in the natural smoke flavor or liquid smoke for that rich, smoky taste.

Step 4: Simmer the Sauce

  • Set the pan over medium heat. Let it slowly come to a simmer, stirring now and then so it doesn’t stick or burn at the bottom.

Step 5: Thicken the Sauce

  • Keep it simmering for about 15–20 minutes, or until the sauce thickens enough to coat the back of a spoon.

Step 6: Cool and Store

  • Take the pan off the heat and let the sauce cool to room temperature. Pour it into a clean jar or bottle with a tight lid, then store it in the fridge for up to two weeks.
