Ingredients
  

  • 12 cups peaches peeled and chopped
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 cup finely diced red bell pepper
  • 2 tsp fine sea salt
  • 1 cup finely diced onion
  • 1/4 tsp ground ginger
  • 1 tbsp olive oil for cooking
  • 1/2 tsp hot pepper flakes

Instructions
 

Prepare the Ingredients:

  • Peel and chop the peaches into small chunks. Finely dice the onion and red bell pepper. Set aside.

Cook the Vegetables:

  • Heat olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.

Cook the Sauce:

  • Add the chopped peaches, apple cider vinegar, brown sugar, honey, Worcestershire sauce, Dijon mustard, smoked paprika, cinnamon, cloves, ground ginger, and hot pepper flakes to the pot. Stir well to combine.

Simmer:

  • Bring the mixture to a simmer over medium heat. Let it cook for about 30-40 minutes, stirring occasionally, until the peaches have broken down and the sauce has thickened.

Blend (Optional):

  • Use an immersion blender to blend the sauce into a smooth consistency or transfer the mixture in batches to a regular blender and puree. If you prefer a chunky texture, skip this step.

Season and Adjust:

  • Taste the sauce and adjust the seasonings if needed, adding more salt, honey, or vinegar depending on your preference.

Cool and Store:

  • Allow the sauce to cool before storing in an airtight container. It can be kept in the refrigerator for up to two weeks or canned for longer storage.

Notes

❖ Sweetness Level: If you’re looking for a less sweet sauce, feel free to reduce the brown sugar or honey. On the flip side, if you enjoy a sweeter sauce, you can always add more honey or sugar.
❖ Spice it Up: For a bit of heat, try adding a pinch of cayenne pepper or a few dashes of hot sauce. It’ll give the sauce a spicy kick that balances out the sweetness of the peaches.
❖ Vegan Friendly: If you want to make this sauce vegan, simply swap out the honey for maple syrup or agave nectar.
