- 1 teaspoon Cajun seasoning adjust based on your preferred spice level
- 2 tablespoons olive oil
- 4 cups tomato sauce smooth or chunky
- 1 onion diced
- 2 cloves garlic minced
- 1 bell pepper diced
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes
- 1 tablespoon brown sugar
- ½ teaspoon cayenne pepper
- 1 bay leaf
- 1 tablespoon fresh parsley chopped
Start by heating the olive oil in a large pan over medium heat.
Add the diced onion and bell pepper to the pan. Cook them for about 5 minutes, until the onion is soft and translucent.
Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Then, sprinkle in the Cajun seasoning, smoked paprika, red pepper flakes, cayenne pepper, and brown sugar. Stir well to combine, letting the spices bloom for about a minute.
Pour in the tomato sauce, then add the bay leaf. Stir everything together and bring it to a simmer.
Let the sauce simmer over low heat for 20 minutes, stirring occasionally. The sauce should thicken and the flavors should meld together.
Remove the bay leaf and stir in the fresh parsley right before serving.
