Ingredients
  

  • 1 1/2 cups tapioca flour
  • 1/3 cup extra virgin olive oil plus more for greasing the pan
  • 1/2 cup packed grated or crumbled cheese your preference – typically Parmesan or mozzarella
  • 1 large egg room temperature
  • 2/3 cup milk
  • 1 teaspoon salt

Instructions
 

Preheat the Oven & Prepare the Pan:

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or mini muffin pan with a bit of extra virgin olive oil. You can also use paper liners if preferred.

Mix the Wet Ingredients:

  • In a medium bowl, whisk together the egg, olive oil, milk, and salt. Make sure the egg is at room temperature for the best results.

Add the Dry Ingredients:

  • Gradually add the tapioca flour and the grated cheese into the wet ingredients. Stir well with a whisk or spoon until the mixture is smooth. It will have a slightly runny consistency.

Bake & Serve:

  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until the cheese breads are golden brown on top and slightly puffed. Let them cool for a couple of minutes before serving warm.

Notes

Feel free to experiment with different types of cheese! Adding a sharper cheese like aged cheddar can give a unique flavor twist. You can also throw in herbs or spices to suit your taste!
