Ingredients
  

  • 1 cup of tapioca flour
  • 1/2 cup of milk whole milk for the richest flavor
  • 1/4 cup of vegetable oil
  • 1 large egg
  • 1/2 teaspoon of salt
  • 1 cup of grated cheese Mozzarella, Parmesan, or traditional Brazilian cheese like Minas

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 400°F (200°C) and grease a mini muffin tin.
  • Blend the Ingredients: In a blender, combine milk, oil, and egg. Blend until smooth.
  • Add the Tapioca Flour and Salt: Pour in the tapioca flour and salt, then blend again until smooth.
  • Add the Cheese: Add the grated cheese and pulse a few times to combine. Don’t over-blend; a few small cheese chunks add to the texture.
  • Pour the Batter: Pour the batter into the mini muffin tin, filling each cup about 3/4 full.
  • Bake: Bake for 15-20 minutes, or until the tops are golden and puffed.
  • Cool and Serve: Let cool slightly, then enjoy warm!

Notes

The key to a perfect pão de queijo is to not overmix the batter. Overmixing can lead to tough, chewy bread.
You can experiment with different cheeses, such as Gruyère or Asiago, to add a unique flavor to your pão de queijo.
