  • teaspoons active dry yeast
  • 1 teaspoon salt
  • tablespoons honey or maple syrup
  • cups warm water 110°F
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon wheat bran or seeds for added texture

Instructions
 

Activate the Yeast

  • In a large mixing bowl, combine warm water and honey. Sprinkle the active dry yeast over the mixture and let it sit for 5-10 minutes until it becomes frothy. This step ensures your yeast is activated and ready for the dough.

Mix the Dough

  • Once the yeast is ready, add the whole wheat flour, salt, and olive oil to the mixture. Stir everything together until a rough dough forms. If you’re using a stand mixer, knead the dough on medium speed for about 8-10 minutes until smooth and elastic. If kneading by hand, this might take around 10-12 minutes.

First Rise

  • Place the dough in a lightly oiled bowl and cover it with a kitchen towel. Allow it to rise in a warm place for about 1 hour or until it has doubled in size.

Shape the Dough

  • Once the dough has risen, punch it down to release any air. Shape it into a loaf by folding the dough into thirds and pinching the seams closed. Place it seam-side down in a greased loaf pan.

Second Rise

  • Cover the loaf with a towel and let it rise again for about 40-60 minutes, until it has risen above the rim of the pan.

Bake the Bread

  • Preheat your oven to 375°F. Bake the bread for 30-35 minutes or until the top is golden brown and sounds hollow when tapped. Remove from the oven and allow it to cool on a wire rack.

Notes

If you prefer a softer crust, you can lightly brush the top of the loaf with melted butter right after it comes out of the oven. This also adds a lovely sheen to the bread.
