Instructions
Activate the Yeast
In a large mixing bowl, combine warm water and honey. Sprinkle the active dry yeast over the mixture and let it sit for 5-10 minutes until it becomes frothy. This step ensures your yeast is activated and ready for the dough.
Mix the Dough
Once the yeast is ready, add the whole wheat flour, salt, and olive oil to the mixture. Stir everything together until a rough dough forms. If you’re using a stand mixer, knead the dough on medium speed for about 8-10 minutes until smooth and elastic. If kneading by hand, this might take around 10-12 minutes.
First Rise
Place the dough in a lightly oiled bowl and cover it with a kitchen towel. Allow it to rise in a warm place for about 1 hour or until it has doubled in size.
Shape the Dough
Once the dough has risen, punch it down to release any air. Shape it into a loaf by folding the dough into thirds and pinching the seams closed. Place it seam-side down in a greased loaf pan.
Second Rise
Cover the loaf with a towel and let it rise again for about 40-60 minutes, until it has risen above the rim of the pan.
Bake the Bread
Preheat your oven to 375°F. Bake the bread for 30-35 minutes or until the top is golden brown and sounds hollow when tapped. Remove from the oven and allow it to cool on a wire rack.
Notes
If you prefer a softer crust, you can lightly brush the top of the loaf with melted butter right after it comes out of the oven. This also adds a lovely sheen to the bread.
