Equipment

  • Mixing bowls (2)
  • Electric mixer or hand whisk
  • Measuring cups and spoons
  • Rubber spatula
  • 9-inch round or square cake pan
  • Cooling rack
  • Sifter (for powdered sugar)

Ingredients

For The Vake

  • 2 cups Bisquick mix
  • 2 large eggs
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • ¾ cup milk
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract

Cream Cheese Frosting

  • ½ cup cream cheese softened
  • ¼ cup unsalted butter softened
  • cups powdered sugar sifted
  • 1 teaspoon vanilla extract

Instructions

  • First, gets your oven going at 350°F (175°C). While that’s heating up, grease and lightly flour your cake pan, or if you prefer, line it with parchment so the cake comes out nice and clean.
  • Next, take your softened butter and sugar and beat them together in a big mixing bowl until they’re light and fluffy. Don’t rush this part it usually takes a couple of minutes with a hand or stand mixer.
  • Once that’s ready, add your eggs one at a time, mixing well after each one. When they’re all in, stir in the vanilla.
  • Now, start adding your Bisquick mix, milk, and a pinch of salt. Mix it slowly at first so the dry stuff doesn’t go flying, then turn the speed up a bit and beat until the batter is nice and smooth. Give the bowl a good scrape down to make sure nothing’s stuck to the sides.
  • Pour the batter into your prepared pan and spread it evenly. Slide it into the oven and bake for around 30 to 35 minutes. You’ll know it’s done when a toothpick poked into the middle comes out clean. Let it sit in the pan for about 10 minutes, and then lift it out onto a rack to cool completely.
  • While it’s cooling, make your frosting. Beat the cream cheese and butter together until it’s smooth and creamy. Little by little, add the sifted powdered sugar and the vanilla, and keep beating until it’s light, fluffy, and easy to spread.
  • Once your cake is completely cool, spread the frosting evenly over the top. Cut yourself a slice soft, sweet, and homemade just the way it should be.
