Ingredients
  

For the Cake:

  • 4 ripe bananas mashed
  • 2 cups 400 g light brown sugar
  • 1 1/2 cups 355 ml oil or melted butter
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups 360 g all-purpose flour
  • 1 cup 100 g unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup 240 g sour cream, room temperature

For the Chocolate Ganache Frosting:

  • 600 g 3 cups dark chocolate (58% couverture chocolate)
  • 1/2 cup 120 ml milk
  • 600 g 2 1/2 cups heavy cream
  • 2 teaspoons vanilla extract

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Wet Ingredients:

  • In a large mixing bowl, combine the mashed bananas, light brown sugar, oil or melted butter, eggs, and vanilla extract. Mix until smooth.

Mix Dry Ingredients:

  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.

Combine Mixtures:

  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the sour cream until fully incorporated.

Bake:

  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Prepare Ganache:

  • While the cakes are cooling, heat the heavy cream and milk in a saucepan over medium heat until it just begins to simmer. Remove from heat and pour it over the chopped dark chocolate in a bowl. Let it sit for a few minutes, then stir until smooth. Mix in the vanilla extract.

Frost the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate and spread a layer of ganache on top. Place the second layer on top and frost the top and sides of the cake with the remaining ganache.
