Ingredients
  

  • 6 ripe bananas mashed
  • 1/2 cup honey preferably raw or organic
  • 2/3 cup 150 grams melted coconut oil
  • 4 large eggs at room temperature
  • 2 tsp vanilla extract
  • 3 cups white whole wheat flour or regular whole wheat flour
  • 1 tsp baking soda
  • 1/2 cup 112 grams milk of choice or water
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup chopped walnuts or chocolate chips optional for texture

Instructions
 

  • Preheat the oven to 350°F (175°C). Line the loaf pan with parchment paper or lightly grease it. Mash the bananas in a large bowl with a fork or masher until smooth.
  • In the same bowl, add honey, melted coconut oil, eggs, and vanilla extract. Whisk until smooth. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Mix in the milk or water to reach desired batter consistency.
  • Add optional ingredients: Fold in walnuts or chocolate chips, if using.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Enjoy!
