- 1/2 cup honey preferably raw or organic
- 2/3 cup 150 grams melted coconut oil
- 4 large eggs at room temperature
- 2 tsp vanilla extract
- 3 cups white whole wheat flour or regular whole wheat flour
- 1 tsp baking soda
- 1/2 cup 112 grams milk of choice or water
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 cup chopped walnuts or chocolate chips optional for texture
Preheat the oven to 350°F (175°C). Line the loaf pan with parchment paper or lightly grease it. Mash the bananas in a large bowl with a fork or masher until smooth.
In the same bowl, add honey, melted coconut oil, eggs, and vanilla extract. Whisk until smooth. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
Gradually add the dry mixture to the wet ingredients, stirring until just combined. Mix in the milk or water to reach desired batter consistency.
Add optional ingredients: Fold in walnuts or chocolate chips, if using.
Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
