  • 3 ripe bananas mashed
  • 1/4 cup ground flaxseed
  • 1 ½ cups all-purpose flour or whole wheat flour
  • ½ cup brown sugar adjust to taste

  • ¼ cup melted butter or vegetable oil
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper. In a large bowl, mash the ripe bananas thoroughly. Add the eggs, melted butter (or oil), vanilla extract, and brown sugar. Whisk together until well combined.
  • In another bowl, sift together the flour, ground flaxseed, baking soda, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid over mixing.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool for 10-15 minutes before slicing.
