Ingredients

  • 3 ripe bananas mashed
  • 1 cup fresh blueberries you can also use frozen, just thaw and drain them
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/3 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 teaspoon cinnamon for added warmth

Instructions

Step 1: Preheat Your Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Wet Ingredients

  • In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.

Step 3: Combine the Dry Ingredients

  • In another bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon. This helps to ensure that the baking powder and soda are evenly distributed throughout the bread.

Step 4: Mix Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!

Step 5: Fold in the Blueberries

  • Gently fold in the blueberries, being cautious not to crush them. This step adds bursts of flavor throughout the bread.

Step 6: Bake

  • Pour the batter into the prepared loaf pan. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it with aluminum foil.

Step 7: Cool and Serve

  • Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and enjoy your Banana Blueberry Bread warm or at room temperature.

Notes

Feel free to adjust the sugar according to your taste. Overripe bananas add natural sweetness, so you might need less sugar than you think!
