Equipment

  • Mixing bowl
  • Whisk
  • Fork
  • Measuring cups and spoons
  • Loaf pan (9×5 inches)
  • Parchment paper (optional)
  • Cooling rack

Ingredients

  • 3 ripe bananas mashed
  • 1 cup rolled oats
  • 1 cup whole wheat flour or all-purpose
  • 1/2 cup brown sugar packed
  • 1/4 cup honey or maple syrup
  • 1/3 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional
  • 1/2 cup walnuts or chocolate chips optional

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). This ensures your bread bakes evenly.

Step 2: Prepare the Loaf Pan

  • Grease your loaf pan with a little oil or line it with parchment paper for easy removal after baking.

Step 3: Mix the Wet Ingredients

  • In a mixing bowl, mash the ripe bananas using a fork. Add the brown sugar, honey, vegetable oil, eggs, and vanilla extract. Whisk everything together until smooth and well combined.

Step 4: Combine the Dry Ingredients

  • In a separate bowl, mix the rolled oats, whole wheat flour, baking soda, salt, and cinnamon. Stir until well combined.

Step 5: Combine Wet and Dry Mixtures

  • Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; be careful not to overmix. If you’re adding walnuts or chocolate chips, fold them in at this stage.

Step 6: Pour into the Loaf Pan

  • Pour the batter into the prepared loaf pan. Spread it evenly with a spatula.

Step 7: Bake

  • Bake in the preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean.

Step 8: Cool and Serve

  • Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a cooling rack to cool completely.
