Equipment

  • Measuring cups and spoons
  • Whisk
  • loaf pan,
  • parchment paper,

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon optional
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ripe bananas mashed (about 1 cup)
  • 1 cup pitted dates chopped
  • 1/2 cup walnuts or pecans chopped (optional)

Instructions

Preheat and Prepare:

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or oil, and line the bottom with parchment paper to prevent sticking.

Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined.

Cream Butter and Sugars:

  • In a separate large bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

Add Eggs and Vanilla:

  • Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.

Incorporate Bananas and Dates:

  • Fold in the mashed bananas and chopped dates until evenly distributed throughout the batter.

Combine and Add Nuts:

  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to prevent a dense loaf. If desired, fold in the chopped nuts.

Bake:

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Allow the bread to cool in the pan for about 10 minutes, then remove it and place it on a wire rack to cool completely before slicing.

Notes

Feel free to customize this recipe. You can substitute the butter with coconut oil or even yogurt for a lighter version. For added flavor, consider mixing in some chocolate chips or dried fruit.
