  • 3 ripe bananas mashed
  • 1/2 cup unsalted butter melted

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup fresh or dried cranberries chopped if using dried
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Banana Mixture

  • In a large mixing bowl, combine the mashed bananas and melted butter. Stir until well combined. Add the sugar, beaten eggs, and vanilla extract. Mix until smooth.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring just until combined. Be careful not to overmix!

Step 4: Fold in Cranberries and Nuts

  • Gently fold in the cranberries and nuts (if using) until evenly distributed throughout the batter.

Step 5: Bake the Bread

  • Pour the batter into the prepared loaf pan. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with foil.
