Ingredients
  

  • 200 g back bacon fried and roughly chopped (7 oz)
  • 1 cup cheddar cheese grated
  • 1 ¼ cups all-purpose flour
  • 2 extra-large eggs
  • ½ teaspoon salt
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons sugar
  • 2 tablespoons olive oil
  • ¾ cup milk

Instructions
 

  • Begin by frying the back bacon in a pan over medium heat until it’s nicely browned and slightly crispy. Remove it from the heat and allow it to cool slightly, then roughly chop it into bite-sized pieces. While the bacon is cooling, grate the cheddar cheese and chop the parsley.
  • In a large mixing bowl, sift together the all-purpose flour, sugar, and salt. Stir in the chopped parsley, grated cheddar cheese, and chopped bacon, ensuring everything is evenly coated in the flour. This helps keep the bacon and cheese from sinking in the batter.
  • In a separate bowl, whisk together the eggs, olive oil, and milk until smooth. Make a well in the center of the dry ingredients and pour in the wet mixture.
  • Gently fold the wet and dry ingredients together using a spatula or wooden spoon. Mix just until everything is combined – do not overmix, as this will make the bread tough.
  • Preheat your oven to 180°C (350°F). Pour the batter into a greased or parchment-lined loaf tin (roughly 8×4 inches). Smooth out the top and bake for about 35–40 minutes, or until a skewer inserted into the center comes out clean. Allow to cool in the tin for 10 minutes, then transfer to a wire rack.

Notes

This savory bread is perfect served warm with a little butter, or cold as part of a picnic or lunchbox. You can customize it by adding a touch of chili flakes for heat, or using different cheeses like mozzarella or pepper jack.
