- 4 medium ripe bananas mashed, about 1½ cups
- 2¼ cups whole wheat flour or spelt flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup unsweetened applesauce or plain Greek yogurt
- ⅓ cup maple syrup or honey
- 2 tablespoons avocado oil or melted coconut oil
Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper. In a large bowl, mash the bananas with a fork or potato masher until smooth. You should have about 1½ cups.
To the mashed bananas, add eggs, applesauce (or yogurt), maple syrup (or honey), vanilla extract, and melted oil. Whisk until well combined. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture. Stir with a spatula just until combined. Do not overmix.
Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
