Ingredients
  

  • 4 medium ripe bananas mashed, about 1½ cups
  • cups whole wheat flour or spelt flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup unsweetened applesauce or plain Greek yogurt
  • cup maple syrup or honey
  • 2 tablespoons avocado oil or melted coconut oil

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper. In a large bowl, mash the bananas with a fork or potato masher until smooth. You should have about 1½ cups.
  • To the mashed bananas, add eggs, applesauce (or yogurt), maple syrup (or honey), vanilla extract, and melted oil. Whisk until well combined. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture. Stir with a spatula just until combined. Do not overmix.
  • Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
