Set your oven to preheat at 350°F (175°C). Prepare a 9×5-inch loaf pan by greasing it lightly or lining it with parchment paper to make removing the bread easier later.
In a large bowl, mash the bananas until they’re smooth. Add in the eggs, applesauce or Greek yogurt, maple syrup or honey, oil, and vanilla extract. Whisk everything together until you have a smooth, consistent mixture.
In another bowl, mix together the whole wheat flour, baking powder, baking soda, and salt. Stir well so that everything is evenly combined.
Slowly add the dry ingredients into the wet mixture. Use a spatula to gently stir until everything is just mixed together. Don’t over mix this can make the bread turn out dense instead of soft.
Pour the batter into your prepared loaf pan and spread it evenly. Bake in the oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for about 10 minutes, then take it out and place it on a wire rack. Allow it to cool completely before slicing and enjoying.
