- 1 small apple peeled and finely grated (optional but adds great texture and a touch of natural sweetness)

Cook the Peppers and Aromatics
Warm olive oil in a medium saucepan over medium heat. Toss in the chopped habanero peppers and the grated apple if you’re using it. Cook for a couple of minutes, stirring often, until the peppers soften and their aroma comes through.
Mix in the Liquids and Sweeteners
Add the apple juice or cider, ketchup, apple cider vinegar, brown sugar, and honey. Stir everything together well. This creates the sweet and tangy base of your sauce.
Add Seasonings and Let It Simmer
Stir in the Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, black pepper, and a bit of salt. Bring it all to a gentle boil, then lower the heat and let it simmer uncovered for about 20 minutes. Stir now and then as it thickens and reduces.
Blend If You Like It Smooth
If you want a smooth sauce, blend it with an immersion blender right in the pot, or carefully transfer it to a blender. If you’d rather keep some texture especially from the apple you can leave it as is.
Habanero peppers are very spicy. Start with one pepper if you’re unsure about the heat level, and wear gloves when handling to avoid skin irritation.
Removing the seeds and membranes can also reduce the heat. Let the sauce sit overnight in the fridge before using. This gives the flavors time to meld and develop a deeper, more balanced taste.
