Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Whisk or hand mixer
  • Measuring cups and spoons
  • Loaf pan (9×5 inches)
  • Spatula
  • Cooling rack

Ingredients

  • 1 cup ripe bananas about 2 medium-sized bananas, mashed
  • 1 cup peeled and finely chopped apples about 1 medium apple
  • 1/2 cup chopped walnuts or pecans
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour your 9×5-inch loaf pan, or line it with parchment paper for easier removal.
  • Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg. Set aside.
  • Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, chopped apples, and chopped nuts. Stir in the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well blended.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Be careful not to overmix, as this can result in a dense loaf.
  • Pour Batter into Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake: Place the pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly cracked.
  • Cool: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely before slicing.

Notes

Want more spice? Add some nutmeg or ginger. And if you prefer a sweeter loaf, consider adding an extra tablespoon of brown sugar or a drizzle of honey into the batter.
