Ingredients
  

  • 1 cup 2 medium ripe bananas, mashed
  • 1 cup diced apple peeled or unpeeled, your choice
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon optional, for warmth
  • 1/2 cup chopped walnuts or pecans
  • 1 tsp vanilla extract

Instructions
 

  • Start by heating your oven to 350°F (175°C). While it warms up, prepare your loaf pan by greasing it with butter or a non-stick spray, then sprinkle a little flour over it to prevent sticking.
  • Next, take a large bowl and beat together softened butter and sugar until the mixture is light and fluffy. You can do this with a whisk or an electric mixer—whatever you prefer.
  • Once that’s smooth, add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract to bring everything together.
  • In a separate bowl, combine the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon. Give them a good whisk to make sure they’re evenly mixed.
  • Now, slowly add the dry ingredients to the wet mixture, stirring gently just until everything is combined. Be careful not to overmix, or your bread could turn out tough.
  • After that, fold in the mashed bananas, diced apples, and chopped walnuts. Mix just enough to spread the fruits and nuts evenly throughout the batter.
  • Pour the batter into the prepared loaf pan, smoothing the top a bit. Place it in the oven and bake for about 55 to 65 minutes. You’ll know it’s done when a toothpick inserted in the center comes out clean.
  • Once baked, let the bread cool in the pan for about 10 minutes. Then, carefully remove it and transfer to a wire rack to cool completely before slicing and serving.
